Best I've made yet. Dried it in the smoker with oak soaked in Jack Daniels & water at 200 deg for just over 2 hrs. (I was partly soaked in JD & water too)
3-5 lbs venison sliced 1/4" thick with all fat & silver skin removed.
1 c. soy sauce
1 c. apple juice
1/2 c. bbq sauce
1/2 c. brown sugar
1/4 c. molasses
1/4 c. worcestershire sauce
2 T. garlic powder
2 T. onion powder
2 T. kosher salt
1 T. red pepper flakes
1 T. black pepper
2 t. Tender Quick
1 t. cayenne pepper powder
I heat the marinade on the stove and let cool, then strain before adding to the meat. Soak for a min of 8 hrs--overnight is better.
